Yeah, I freeze mine. They thaw out pretty quickly if you pre-cut them and bag them individually.

They need to be refrigerated. I keep them in a ziplock in a single layer. I have found that they sometimes create a little condensation especially if not totally cooled before storing, so I also place one sheet of paper towel in there to keep them from getting too wet. This keeps them fresh and moist. I sometimes make a few batches of these and the pumpkin bars in that case I wrap them in individual servings in plastic wrap. You can take them with you in the when ever and they defrost quickly, or you can nuke them for about 30 second (unwrapped).

I have started with freezing it. In the morning I take it to work the with me and till my break time it's unforzen and I know it's "fresh" =)
